Starting off with a burger

I have had this website domain for over a year. I set it up so excited about blogging and sharing my recipes and photos. Somehow every time I was about to post I got overwhelmed with self-doubt and fear. I have never been much of a writer and I guess I was scared that reading my blog you would be able to tell. I have written and deleted tons of posts and recipes and a year later... still haven't accomplished anything. I am finally fed up with my procrastinating, so here is my very first blog post!  It only makes sense that I start with my favorite meal. A burger… 



I have been obsessed with burgers for a very long time. Something about meat between bread makes me very happy. I think a burger takes the cake because it's so versatile. You can make so many different kinds and experiment with so many different flavors. 

I have had tons of favorite burger spots over the years that have all be replaced by my latest discoveries. But now?… I think I have found my NEW FAVORITE BURGER!!!  I recently moved and there is a Belcampo Meat Co. down the street from me. I had heard about it for years and  people have raved about their meat but I'd never tried it . After driving by for a few weeks I finally decided to give it a go. Long story short, I am obsessed!  Their organic grass-fed meat is what's so amazing. The flavor of the meat its self is so delicious, lite and fresh.  After trying every single burger on the menu, I figured it was time to take a stab at making my own. As good as my burgers are, I just knew they were putting some kind of magical fairy dust on theirs to make it so amazing. So I came up with this recipe and I must say… its pretty damn good!! It's that Belcampo meat baby !!!!!!

Lamb Burger 


  • 1/2 lb ground lamb 
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp canola oil
  • 2 tbsp mayo
  • 1 tbsp harissa paste (cava is my favorite brand )
  • Aged Manchego cheese, sliced 
  • Grilled red onions
  • Baby sprouts (i used arugula)
  • Brioche bun


Mix mayo and harissa in a small bowl and set aside. 

Lightly patty out ground lamb into a 1 inch patty. Season both sides with salt and pepper. 

Heat canola oil in a skillet to medium/high heat. Add patty and cook until browned and beautiful crusty; about 4-5 mins on each side for med/rare or to your desired doneness. When there is about 1 minute left of cooking top with cheese. Add about a table spoon of water to the skillet and cover until cheese is melted (this will happen very quickly). Remove from heat and build your burger. Bottom bun, burger, mayo, onion, sprouts, and top bun. DONE!
